Signatory Vintage Exceptional Cask Aultmore 17 Year Old 2007 100 Proof Edition #1

Signatory Vintage Exceptional Cask Aultmore 17 Year Old 2007 100 Proof Edition #1 is a limited Speyside single malt Scotch whisky independently bottled by Signatory Vintage. Distilled at Aultmore in 2007, it matured for 17 years in first-fill Oloroso sherry butts before being bottled in 2024 at 57.1% ABV as part of Signatory Vintage's Exceptional Cask 100 Proof series. Bottled without added colour or chill filtration, this richly sherried expression combines Aultmore's malt character with concentrated dried and stewed fruit, caramel, chocolate and warming oak spice.

Food Pairing: Pair with aged Manchego, roasted cashews, dark chocolate, fruitcake, caramelized nuts or rich red-fruit desserts.

Tasting Notes: Rich and sherry-driven, with stewed red fruits, caramel and chocolate layered with toasted nuts, citrus, pastry and warming wood spice.

Nose: Stewed red fruit and syrupy peaches mingle with caramel, milk chocolate, buttery pastry, cherries and gentle spice.

Palate: Full-bodied and warming, with dark cherries, citrus and rich sherry fruit complemented by chocolate, caramel, toasted nuts and seasoned oak.

Finish: Long and warming, with lingering chocolate, espresso, dark fruit and pleasantly drying oak spice.
