Signatory Vintage 100 Proof Edition #59 Orkney 14 Year Old 2011 Palo Cortado Single Malt Scotch is an independently bottled single malt distilled in Orkney in 2011 and matured for 14 years before finishing in first-fill Palo Cortado sherry hogsheads. Bottled by Signatory Vintage in 2025 at 57.1% ABV, the whisky combines honeyed malt and gentle smoky character with the dry, nutty richness of Palo Cortado sherry. It is presented at natural colour and without chill filtration. 

Food Pairing: Pair with roast pork, smoked ham, aged Manchego, toasted almonds, charred mushrooms, dark chocolate, or orange-infused desserts.

Tasting Notes: Rich yet balanced, bringing together honeyed malt, dried fruit, citrus and roasted nuts with subtle smoke, sherry spice and seasoned oak.

Nose: Heather honey and gentle smoke mingle with orange peel, golden raisins and toasted almonds, followed by walnut, polished oak and subtle leather.

Palate: Full and warming with honeyed malt, spiced orange and dried fruit layered over roasted nuts, cocoa and savoury Palo Cortado sherry character.

Finish: Long and warming with lingering walnut, dried fruit, oak spice and soft smoke.
