The vine used is 100% Renano Riesling: the grapes are grown in seven different vineyards, with vines that are on average forty years old, grown on predominantly marnic-calcareous soils. As the name suggests, limestone plays a fundamental role in giving varietal nuances to these grapes, which are harvested with the utmost care to preserve these qualities. The vinification begins with a slow natural fermentation, without the use of additional yeasts, inside large oak barrels.
