The maguey cuishe grows in the lower areas of Oaxaca's central valleys, which have rocky terrain, the warmest temperatures, and generally dry conditions. Consequently, the flavors have a more savory minerality and an earthy reference. Cuishe mezcal is a mezcal made with totally wild maguey and which takes between 9 and 12 years to reach maturity.
